Chicken Pillows with Creamy Parmesan Sauce is a comforting and delicious dish featuring tender chicken, savory turkey bacon, and chicken ham wrapped in golden puff pastry. Topped with a rich, creamy parmesan sauce, this recipe is perfect for weeknight dinners, special occasions, or whenever you want a cozy, impressive meal.

  • 2 chicken breasts, cut into bite-sized pieces
  • 1 sheet puff pastry, thawed
  • 2 slices turkey bacon, chopped
  • 2 slices chicken ham, diced
  • 1 cup heavy cream
  • ¾ cup parmesan cheese, freshly grated
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 clove garlic, minced
  • ½ small onion, finely chopped
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Heat olive oil in a skillet over medium heat. Sauté onion until translucent.
  3. Add garlic, turkey bacon, and chicken ham; cook for 2–3 minutes.
  4. Season chicken pieces with salt and pepper, then cook in skillet until golden, about 5–6 minutes. Remove from heat.
  5. Roll out puff pastry and cut into 4×4-inch squares.
  6. Place a spoonful of chicken mixture in the center of each square. Fold pastry over and seal edges with a fork.
  7. Brush each pillow with melted butter. Place on a parchment-lined baking sheet.
  8. Bake for 20–25 minutes until golden and puffed. Let rest 5 minutes.
  9. For the sauce: melt butter in a saucepan, whisk in flour, cook 1–2 minutes.
  10. Gradually add heavy cream, whisking until smooth. Stir in parmesan until thickened, 3–4 minutes. Season with salt, pepper, and a pinch of nutmeg.
  11. Serve pillows on a plate, pour sauce over them, and garnish with parsley.

You can prepare the filling in advance.

Customize with herbs like thyme or basil for added flavor.

Smaller pillows work well as appetizers.
