  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 4 croissants
  • 1 tablespoon lemon juice, fresh

Instructions

  1. Cook the chicken breast if it is not already done and season it with salt and pepper before roasting at 375°F (190°C) for about 25 minutes until cooked through.
  2. Once cooled, shred or chop the chicken into bite-sized pieces.
  3. In a large mixing bowl, combine the shredded chicken with 1/2 cup of Caesar dressing, 1/4 cup of grated Parmesan cheese, and a squeeze of fresh lemon juice.
  4. Stir until everything is well-coated and creamy.
  5. Chop about two cups of romaine lettuce into bite-sized pieces and gently fold them into the chicken mixture.
  6. Slice the croissants in half lengthwise.
  7. Generously spoon the chicken Caesar mixture onto the bottom half of each croissant.
  8. Sprinkle additional grated Parmesan over the filling before placing the top half of the croissant back on.
  9. Garnish with more romaine if desired and serve immediately.
