For the Pretzels:

  • ⅔ cup baking soda
  • Coarse salt for sprinkling

For the Cheese Dip:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 2 cups shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder (optional)
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a small bowl, combine warm water and sugar. Sprinkle yeast over the top and let it foam for 5–10 minutes.
  2. Mix the dough: In a large bowl, combine flour and salt. Gradually add the yeast mixture and melted butter. Stir until a dough forms.
  3. Knead the dough: Transfer the dough to a floured surface and knead for 5–7 minutes until smooth and elastic.
  4. First rise: Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour, or until doubled in size.
  5. Preheat oven: Preheat the oven to 450°F (230°C) and line two baking sheets with parchment paper.
  6. Prepare the baking soda bath: In a large pot, bring 10 cups of water to a boil, then add ⅔ cup baking soda.
  7. Shape the pretzels: Punch down the risen dough and divide it into 8–12 pieces. Roll each piece into a rope and twist into traditional pretzel shapes.
  8. Boil the pretzels: Carefully drop each pretzel into the boiling baking soda water for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheets.
  9. Add salt and bake: Sprinkle coarse salt over each pretzel and bake in the preheated oven for 12–15 minutes, or until golden brown.
  10. Make the roux for the dip: In a medium saucepan, melt butter over medium heat. Whisk in flour for 1–2 minutes until smooth.
  11. Add milk gradually: Slowly pour in milk while whisking continuously. Cook for 3–5 minutes until slightly thickened.
  12. Add cheese and seasonings: Remove from heat, stir in shredded cheese, garlic powder, mustard powder (optional), salt, and pepper. Return to low heat if needed to melt fully.
  13. Serve: Arrange pretzels on a platter and place cheese dip in a bowl. Optionally, customize with herbs, spices, or toppings before serving.

Notes

For extra softness, brush pretzels with melted butter after baking.

Dough can be prepared ahead and refrigerated overnight.
