These Cheesy Mashed Potato Puff Bites are the ultimate way to reinvent leftover mashed potatoes into something fun, crispy, and satisfying. Baked in a muffin tin, they come out perfectly puffed, golden on the outside, and creamy inside with pockets of melted cheese. Ideal as a snack, appetizer, or side dish, this recipe is easy to prepare, affordable, and endlessly customizable.

  • 2 cups mashed potatoes (cold or room temperature)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or cooked turkey bacon for added flavor

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with oil or nonstick spray.
  2. In a large bowl, combine the mashed potatoes, shredded cheddar, Parmesan, milk, egg, and flour. Add garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed.
  3. If using green onions or turkey bacon, fold them into the mixture at this stage.
  4. Spoon the mixture evenly into the greased mini muffin tin, filling each cavity nearly to the top. Press down slightly to pack.
  5. Bake in the preheated oven for 25–30 minutes, or until the tops are golden brown and edges are crispy.
  6. Remove the pan from the oven and let the bites rest for 5 minutes. Gently release them from the muffin tin using a butter knife or small spatula.
  7. Serve warm. Garnish with fresh herbs or serve with your favorite dipping sauce if desired.

Notes

Use leftover mashed potatoes or freshly prepared ones (fully cooled).

For extra flavor, smoked paprika or chopped herbs can be added to the mix.

Make sure the mashed potatoes are not too wet or runny for best results.

You can double the batch and freeze half for later use.
