Cheesy Garlic Scalloped Potatoes are the ultimate comfort food—rich, creamy, and filled with layers of tender potatoes smothered in a homemade garlic cheese sauce. This dish makes the perfect side for family dinners, holiday gatherings, or any meal where you want to impress with minimal effort. It’s warm, satisfying, and always a crowd-pleaser.

  • 6 large russet potatoes, peeled and sliced into -inch rounds
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese (divided)
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Slice the potatoes evenly into thin rounds (about ⅛ inch thick) and set aside.
  3. Melt the butter in a saucepan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Whisk in the flour and cook for another minute to form a smooth roux.
  5. Gradually pour in the milk and cream while whisking continuously to avoid lumps. Cook for 3–5 minutes until slightly thickened.
  6. Season the sauce with salt, pepper, onion powder, and paprika.
  7. Add 1½ cups of cheddar and all the mozzarella. Stir until melted and smooth. Remove from heat.
  8. Layer one-third of the sliced potatoes into the prepared dish. Spread one-third of the cheese sauce on top. Repeat for two more layers, finishing with the remaining sauce.
  9. Sprinkle the remaining ½ cup cheddar cheese over the top.
  10. Cover the dish with foil and bake for 45 minutes. Remove foil and bake an additional 25–30 minutes until golden brown and bubbly.
  11. Let rest for 10–15 minutes before serving. Garnish with chopped parsley.

Notes

For added protein, layer in cooked turkey bacon or chicken ham.

Use Yukon gold potatoes for a creamier texture.
