This Cheesy Garlic Focaccia Bread is a soft, flavorful bread infused with garlic and topped with melted cheese. It’s easy to prepare, versatile, and perfect as an appetizer, snack, or side dish.

Ingredients

  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ¼ cups warm water (about 110°F / 43°C)
  • 2 tbsp olive oil (plus extra for greasing and brushing)
  • 1 tsp sugar
  • 1 tsp salt
  • 3 cloves garlic, minced
  • 1 ½ cups shredded mozzarella cheese (or your preferred cheese)
  • Optional: dried rosemary or oregano for topping

Instructions

  1. In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add the yeast mixture and 2 tablespoons olive oil. Stir to combine into a dough.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise in a warm place for about 1 hour, until doubled in size.
  5. Punch down the dough and transfer to a greased baking sheet. Stretch it into a 1-inch thick rectangle or circle.
  6. Use fingers to make dimples all over the surface.
  7. Mix minced garlic with olive oil and brush evenly over the dough.
  8. Sprinkle shredded cheese evenly on top, adding herbs if desired.
  9. Cover and let rest for 20-30 minutes for a second rise.
  10. Preheat oven to 425°F (220°C). Bake for 20-25 minutes until cheese is golden and crust is crisp.
  11. Cool slightly on a wire rack before slicing and serving.

Avoid over-baking to keep focaccia soft inside.
