  • 1 tablespoon olive oil or butter for toasting

Instructions

  1. Prepare the chicken: Season fresh chicken with salt and pepper and grill, roast, or pan-cook until fully done. Slice into thin strips. Rotisserie chicken can be used for convenience.
  2. Mash the avocado: Cut avocado in half, remove the pit, scoop out the flesh, and mash in a bowl. Season with salt, pepper, and optional lemon juice.
  3. Prepare the bread: Spread mayonnaise or Greek yogurt on one side of each bread slice.
  4. Assemble the sandwich: Place a slice of bread, spread side down, on a flat surface. Layer with mashed avocado, sliced chicken, cheese, and optional toppings. Cover with the second slice, spread side up.
  5. Toast the sandwich: Heat butter or olive oil in a skillet over medium heat. Cook the sandwich until golden brown on one side (3–4 minutes), then flip and cook until cheese melts and bread is crisp.
  6. Serve: Remove from the skillet, let rest for one minute, slice in half, and serve warm.
