  • 3 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1½ cups grated cheese (cheddar, mozzarella, or a mix)
  • 1½ cups buttermilk (or milk + 1 tablespoon lemon juice)
  • 1 large egg
  • ¼ cup melted butter or neutral oil
  • Optional: 2 tablespoons chopped chives, parsley, or 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a loaf pan or line it with baking paper.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. Add the grated cheese and stir to coat the cheese with the flour mixture.
  4. In a separate bowl, whisk together the buttermilk, egg, and melted butter.
  5. Pour the wet mixture into the dry mixture. Stir just until combined. Do not overmix.
  6. Fold in optional chopped herbs or garlic powder if using.
  7. Pour the batter into the prepared pan. Smooth the top with a spatula.
  8. Sprinkle extra cheese on top if desired.
  9. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the bread rest in the pan for 10 minutes. Remove and cool completely on a wire rack before slicing.

Notes

You can substitute buttermilk with milk + lemon juice.

Try different cheeses for variety. Sharp cheddar, gouda, or mozzarella all work well.

Avoid overmixing to keep the texture light and fluffy.

This recipe works great as muffins or mini loaves by adjusting the baking time.
