  • 1 cup water
  • ½ cup unsalted butter, softened
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 ½ cups heavy cream, chilled
  • 1 cup powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 2 cups diced apples, firm varieties like Granny Smith or Honeycrisp
  • 1 cup caramel sauce
  • ½ teaspoon cinnamon, freshly ground preferred
  • A pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium saucepan, bring 1 cup of water and ½ cup of butter to a boil over medium heat.
  3. Once boiling, remove from heat and add 1 cup of flour all at once.
  4. Stir vigorously until a ball forms.
  5. Let it cool slightly before adding 4 large eggs one at a time, mixing well after each addition until smooth.
  6. Line two baking sheets with parchment paper.
  7. Transfer your eclair dough into a piping bag fitted with a large round tip.
  8. Pipe long lines about 4 inches long on the parchment paper, leaving space between them.
  9. Place your baking sheets in the preheated oven and bake for about 20-25 minutes until golden brown and puffed up.
  10. Once done, remove from oven and let them cool completely on a wire rack.
  11. In a mixing bowl, combine 1 ½ cups of heavy cream with 1 cup of powdered sugar and 2 teaspoons of vanilla extract.
  12. Whip until soft peaks form.
  13. In a separate bowl, toss together your diced apples with cinnamon and a pinch of salt.
  14. Fold these spiced apples gently into half of your whipped cream mixture.
  15. Slice each cooled eclair in half lengthwise.
  16. Spoon generous amounts of your apple filling onto the bottom half of each eclair.
  17. Drizzle with caramel sauce before placing the top half back on.
  18. Finish by topping each assembled eclair with more whipped cream and an extra drizzle of caramel.
