Bruschetta Chicken Pasta is a vibrant and hearty dish that combines fresh tomatoes, aromatic basil, tender chicken, and flavorful turkey bacon and chicken ham. Perfect for weeknight dinners or casual gatherings, this recipe is quick, customizable, and packed with flavor.

  • 2 chicken breasts, cut into bite-sized pieces
  • 300g pasta (penne or fusilli recommended)
  • 3 ripe tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons balsamic vinegar (optional)
  • 100g turkey bacon, chopped
  • 100g chicken ham, chopped
  • 1/2 cup beef, cooked and diced (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook chicken pieces, seasoning with salt and pepper, for 5–7 minutes until golden and fully cooked. Remove from skillet.
  3. Add turkey bacon and chicken ham to the same skillet. Cook for 3–4 minutes until slightly crispy.
  4. Reduce heat to low. Add minced garlic and sauté for 30 seconds until fragrant. Add diced tomatoes and cook for 3–5 minutes until softened.
  5. Return chicken to the skillet. Stir in fresh basil. Add reserved pasta water if the mixture is dry.
  6. Add cooked pasta to the skillet and toss to coat evenly.
  7. Sprinkle grated Parmesan cheese over the pasta and mix gently.
  8. Optional: drizzle 1–2 tablespoons of balsamic vinegar for added flavor. Serve warm.

Notes

Customize with vegetables like zucchini, bell peppers, or spinach.

Adjust seasoning to taste.

For a lighter version, reduce cheese or omit bacon/ham.
