These Broccoli and Cheese Stuffed Baked Potatoes are a comforting and flavorful dish that combines tender baked potatoes with creamy, cheesy filling, fresh broccoli, turkey bacon, and chicken ham. Perfect for weeknight dinners, potlucks, or family gatherings, this recipe is both versatile and budget-friendly.

  • 4 large baking potatoes
  • 2 cups fresh broccoli florets, steamed
  • 1 ½ cups shredded cheddar cheese (or cheese of your choice)
  • ½ cup milk
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 4 slices turkey bacon, cooked and crumbled
  • ½ cup chicken ham, diced
  • Optional toppings: chopped green onions, sour cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the baking potatoes thoroughly, then pat dry.
  3. Pierce each potato several times with a fork.
  4. Rub the potatoes lightly with olive oil and sprinkle with salt.
  5. Place the potatoes directly on the oven rack or a baking sheet. Bake for 50–60 minutes until tender.
  6. Steam the broccoli florets for 5–7 minutes until tender but still bright green. Drain and set aside.
  7. Cook the turkey bacon in a skillet until crispy, then crumble. Set aside.
  8. Dice the chicken ham into small cubes and sauté for 2–3 minutes.
  9. Remove baked potatoes from the oven and cool for 5 minutes.
  10. Slice each potato lengthwise without cutting all the way through.
  11. Scoop out the potato flesh into a bowl, leaving a thin layer inside the skin.
  12. Mash the potato flesh with butter, milk, garlic powder, salt, and pepper until creamy.
  13. Fold in steamed broccoli, shredded cheese, crumbled turkey bacon, and diced chicken ham.
  14. Spoon the mixture back into the potato skins, mounding on top.
  15. Sprinkle extra cheese on top.
  16. Return to the oven for 10–15 minutes until the cheese melts and turns slightly golden.
  17. Garnish with chopped green onions or sour cream if desired.

Notes

For extra flavor, try adding a pinch of paprika or chili flakes to the mashed potato mixture.

Make it vegetarian by omitting the turkey bacon and chicken ham and adding additional vegetables.

For a lighter version, use reduced-fat cheese and milk.
