Breakfast Sweet Potatoes is a wholesome and flavorful morning dish that combines the natural sweetness of tender sweet potatoes with savory turkey bacon, chicken ham, sautéed vegetables, and perfectly cooked eggs.   • 2 medium sweet potatoes, peeled and diced
  • 4 large eggs
  • 4 slices of turkey bacon, chopped
  • 100 grams of chicken ham, diced
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon olive oil
  • Fresh herbs, like parsley or chives, for garnish

Instructions

  1. Peel and dice sweet potatoes into 1-inch cubes. Toss with ½ tablespoon olive oil, paprika, salt, and black pepper.
  2. Heat remaining olive oil in a large non-stick skillet over medium heat. Add sweet potatoes in a single layer. Cook 10–12 minutes, stirring occasionally, until tender and lightly caramelized.
  3. Chop turkey bacon and dice chicken ham. In a separate skillet over medium heat, cook turkey bacon until crisp; remove and set aside. Sauté chicken ham for 2–3 minutes until heated.
  4. In the same skillet, add a little olive oil if needed and sauté onion and red bell pepper for 3–4 minutes until soft.
  5. Reduce heat on the sweet potato skillet to low. Add sautéed vegetables, cooked turkey bacon, and chicken ham. Gently fold to combine. Adjust seasoning if necessary.
  6. Make four wells in the mixture. Crack one egg into each well. Cover and cook 4–5 minutes until whites are set and yolks slightly runny. Cook longer for firmer yolks.
  7. Garnish with chopped parsley or chives. Serve immediately.

Notes

Optional: add spinach, kale, or mushrooms for extra nutrition.

Can prepare sweet potatoes in advance to save morning time.
