Ingredients

Scale
  • 2 cups plain Greek yogurt (or vanilla yogurt)
  • 1 cup frozen blueberries
  • 12 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon lemon juice (optional)
  • 1 teaspoon vanilla extract
  • Silicone molds or mini muffin liners

Instructions

  1. Make the Blueberry Swirl:
Add frozen blueberries to a small saucepan. Heat over medium heat, stirring regularly for 5–7 minutes until the berries soften and release juice. Lightly mash the berries with the back of a spoon. Stir in 1 tablespoon honey and lemon juice. Let the mixture simmer until thickened. Remove from heat and let it cool completely.
  2. Prepare the Yogurt Base:
In a medium bowl, combine Greek yogurt with vanilla extract. Add 1 tablespoon honey or maple syrup if you want extra sweetness. Stir until smooth and fully combined.
  3. Assemble the Bites:
Line a mini muffin tin with silicone liners or use a silicone mold. Spoon about 1 tablespoon of yogurt mixture into each cup. Add ½ teaspoon of the blueberry swirl on top of the yogurt. Use a toothpick to gently swirl the berry mixture into the yogurt for a marbled effect.
  4. Freeze:
Place the mold or muffin tray in the freezer. Let the yogurt bites freeze for at least 3 hours or until they are fully firm.
  5. Serve and Store:
Once frozen solid, remove bites from molds. Store in an airtight container in the freezer. Let sit for 1–2 minutes before eating if too hard.

Notes

f using fresh blueberries, cook them the same way as frozen.

For dairy-free bites, use thick coconut or almond yogurt.

You can add a base layer of granola before spooning in the yogurt for texture.

Make sure the blueberry mixture is fully cooled before swirling it into the yogurt.
