  • 2 tablespoons honey (or maple syrup for a vegan version)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch (optional – for thickening)
  • Muffin liners or silicone molds (mini or standard size)

Instructions

  1. Cook the blueberry compote:
    In a small saucepan, combine the blueberries and lemon juice. Place over medium heat and stir occasionally. Let the berries break down and release their juices for 6–8 minutes.
    If using cornstarch, dissolve it in 1 teaspoon of water and stir it in once the berries are soft. Cook for another 1–2 minutes until the sauce thickens slightly. Remove from heat and let cool completely.
  2. Prepare the yogurt mixture:
    In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir until smooth and creamy. Adjust sweetness if desired by adding a little more honey.
  3. Line the molds:
    Line a muffin tin with silicone or paper liners. Spoon yogurt mixture into each mold, filling them about ¾ full. Lightly tap the tray to even out the surface.
  4. Add the swirl:
    Spoon a small amount of cooled blueberry compote on top of each yogurt cup. Use a toothpick or knife tip to gently swirl the fruit into the yogurt, creating a marble pattern.
  5. Freeze:
    Place the tray in the freezer and freeze for at least 3–4 hours until completely solid. Once frozen, remove bites from the molds and store in an airtight container in the freezer.
  6. Serve:
    Let yogurt bites sit at room temperature for 2–3 minutes before serving to slightly soften for a creamy texture.

Notes

You can use other fruits like raspberries, strawberries, or mango as alternatives to blueberries.

Maple syrup can be used instead of honey for a plant-based option.

If using sweetened yogurt, reduce or omit the honey.
