Ingredients

Scale
  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup rolled oats
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp cinnamon (optional)
  • 1 cup fresh or frozen blueberries
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F). Lightly grease a small baking dish or line it with parchment paper.
  2. In a large bowl, combine the cottage cheese and eggs. Whisk until smooth and well combined.
  3. Add the rolled oats, honey or maple syrup (if using), vanilla extract, baking powder, cinnamon, and a pinch of salt. Stir until the mixture is fully blended.
  4. Gently fold in the blueberries. If using frozen berries, add them directly without thawing.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Optional: Sprinkle a few extra blueberries or chopped nuts over the top for added texture.
  7. Bake in the preheated oven for 35–40 minutes or until golden and the center is fully set.
  8. Remove from the oven and allow it to cool slightly before slicing and serving.
  9. Serve warm or cold. Store leftovers in the refrigerator for up to 4 days.

Notes

For a sweeter version, drizzle honey or maple syrup over the top after baking.

Swap blueberries with raspberries, diced apples, or chopped strawberries.

Add nuts or seeds on top before baking for crunch.

This bake is ideal for breakfast meal prep and can be reheated easily.
