Disneyland’s Blue Bayou scalloped potatoes are a creamy, comforting side dish with layers of tender potatoes, savory turkey bacon, and a rich, flavorful sauce. Perfect for holidays, family dinners, or special occasions, this dish combines simplicity with indulgence for a crowd-pleasing result.

  • 68 medium russet potatoes, peeled and thinly sliced
  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese (optional)
  • 4 slices turkey bacon, cooked and crumbled
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with butter.
  2. Cook the turkey bacon in a skillet over medium heat until crisp. Remove, drain on paper towels, and crumble once cooled.
  3. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes to form a roux.
  4. Gradually add milk, whisking constantly to prevent lumps. Stir in garlic powder, onion powder, salt, and black pepper. Cook until thickened.
  5. Begin layering potatoes in the prepared baking dish. Pour a portion of sauce over the first layer, sprinkle with shredded cheese if using, and add some crumbled turkey bacon.
  6. Repeat the layering process until all potatoes, sauce, and bacon are used, finishing with a layer of sauce on top.
  7. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake an additional 20–25 minutes until potatoes are tender and the top is golden.
  8. Remove from oven and let rest for 5–10 minutes. Garnish with chopped parsley before serving.

Notes

Use a mandoline slicer for evenly thin potato slices to ensure uniform cooking.

Allowing the dish to rest after baking helps the sauce thicken and makes serving easier.

Customize with different cheeses or herbs to suit your taste.
