  • 1 cup almond flour, finely ground
  • 1 ¾ cups powdered sugar, sifted
  • 3 large egg whites, at room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter, at room temperature
  • 1 cup heavy cream, cold
  • ½ cup vanilla cake mix
  • sprinkles, for decoration

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Line two baking sheets with parchment paper or silicone mats.
  3. In a mixing bowl, sift together 1 cup of almond flour and 1 ¾ cups of powdered sugar.
  4. In a clean mixing bowl, whip 3 large egg whites until frothy using an electric mixer on medium speed.
  5. Gradually add in ¼ cup of granulated sugar while increasing the speed to high until stiff peaks form.
  6. Gently fold in the almond flour mixture into the whipped egg whites using a spatula.
  7. Transfer your macaron batter into a piping bag fitted with a round tip (about ½ inch wide).
  8. Pipe small circles onto your prepared baking sheets, leaving space between them.
  9. Tap the baking sheets against your counter to release air bubbles and create a flat top.
  10. Bake in your preheated oven for about 15-18 minutes or until they form “feet”.
  11. While they cool down completely, whip together ½ cup unsalted butter, 1 cup heavy cream, and about ½ cup of vanilla cake mix until light and fluffy.
  12. Add in some vanilla extract and sprinkles for extra joy.
  13. Once cooled, pipe a generous dollop of filling onto half of your macaron shells.
  14. Top each filled shell with another shell to create sandwiches.
