Ingredients

Scale
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional)
  • 1 cup chocolate chips or chopped chocolate (optional for topping)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper or lightly grease it with butter.
  2. In a medium saucepan over medium heat, melt 1 cup of unsalted butter, stirring occasionally.
  3. Add 1 cup granulated sugar, 1/4 teaspoon salt, and 2 tablespoons water. Stir until sugar dissolves and mixture is smooth.
  4. Increase heat to a gentle boil, stirring constantly. Cook until mixture turns a rich golden-brown color, approximately 10–15 minutes.
  5. Check temperature with a candy thermometer; it should reach 300°F (149°C) for a hard-crack stage.
  6. Remove from heat and stir in 1 teaspoon vanilla extract immediately.
  7. Pour the hot toffee into the prepared pan, spreading evenly with a spatula.
  8. Optional: Sprinkle chocolate chips or chopped chocolate over the warm toffee. Let sit for a few minutes, then spread until melted. Add nuts if desired.
  9. Let the toffee cool at room temperature for at least 2 hours or refrigerate until firm.
  10. Lift the toffee using parchment paper and cut into bite-sized squares or rectangles. Store in an airtight container.

Notes

Watch the mixture closely to avoid burning; constant stirring is essential.

Customize by adding different nuts, sea salt, or chocolate variations.
