Ingredients

  • 200g chocolate cookies or chocolate graham crackers (for the crust)
  • 100g unsalted butter, melted
  • 500g cream cheese, softened
  • 200g sugar
  • 200g dark chocolate, melted
  • 200ml heavy cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Preheat oven to 170°C (340°F).
  2. Crush cookies into fine crumbs. Mix with melted butter and salt.
  3. Press the mixture into the bottom of a 9-inch springform pan. Chill while preparing filling.
  4. Beat cream cheese until smooth. Gradually add sugar.
  5. Fold in melted chocolate and heavy cream alternately with eggs. Stir in vanilla.
  6. Pour filling over the chilled crust and smooth the top.
  7. Place pan on a baking sheet. Bake 45–55 minutes until edges are set and center slightly wobbly.
  8. Cool at room temperature for 30 minutes. Cover and refrigerate for at least 4 hours or overnight.
  9. Optional: Add toppings like chocolate ganache, whipped cream, or berries before serving.
