  • 1 tablespoon olive oil or cooking oil
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, warmed
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup fresh lettuce or spinach, chopped
  • 1 medium tomato, diced or ½ cup salsa
  • ½ cup ranch dressing
  • Optional: ½ avocado or ½ cup guacamole

Instructions

  1. Cut chicken into bite-sized pieces.
  2. In a bowl, toss chicken with chipotle seasoning, salt, and pepper. Let marinate 10-15 minutes.
  3. Heat oil in a skillet over medium heat. Cook chicken until browned and cooked through (6-8 minutes). Remove from heat.
