Cheesy Mashed Potato Puffs are golden, crispy on the outside, and soft, cheesy, and flavorful on the inside. They are perfect as a snack, appetizer, or side dish, and can be customized with chicken ham, herbs, or vegetables. This recipe is quick, affordable, and loved by both children and adults.

Ingredients

Scale
  • 2 cups leftover mashed potatoes (well-seasoned)
  • 1 cup shredded cheese (cheddar or favorite cheese)
  • ½ cup all-purpose flour
  • 1 large egg
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup finely chopped chicken ham
  • ¼ cup chopped green onions or chives
  • 2 tablespoons butter (for greasing)
  • Optional: breadcrumbs for extra crunch

Instructions

  1. Preheat your oven to 200°C (400°F) and grease a baking sheet with butter or line with parchment paper.
  2. In a large bowl, combine mashed potatoes, shredded cheese, chopped chicken ham, green onions, salt, and black pepper. Mix thoroughly.
  3. Crack the egg into the mixture and fold in gently. Gradually add flour and continue folding until the mixture forms a soft, slightly sticky dough.
  4. Scoop small portions of the mixture and shape them into balls or ovals. Optionally, roll them in breadcrumbs for extra crunch.
  5. Place the shaped puffs on the prepared baking sheet, leaving space between each for even baking.
  6. Bake for 20–25 minutes, turning halfway through, until the exterior is golden and crispy and the cheese inside is melted.
  7. Remove from the oven and let cool slightly. Garnish with extra herbs or a light drizzle of olive oil if desired.

Notes

Ensure mashed potatoes are not too watery; add flour if necessary.

Puffs can be frozen before baking and cooked directly from frozen.
