Balsamic Caramelized Onion Pasta is a simple yet elegant dish that combines the natural sweetness of slowly caramelized onions with the tangy depth of balsamic vinegar.   • 4 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Optional: freshly grated Parmesan or plant-based cheese
  • Fresh herbs (parsley or thyme) for garnish

Instructions

  1. Peel and thinly slice the onions evenly. Mince the garlic and gather all ingredients.
  2. Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add onions and reduce heat to medium-low. Stir occasionally for 20–25 minutes until golden and soft.
  5. Stir in minced garlic and cook 1–2 minutes until fragrant.
  6. Pour in balsamic vinegar, scraping up any brown bits. Cook 2–3 minutes until slightly thickened.
  7. Add cooked pasta to the skillet, tossing to coat. Use reserved pasta water to adjust sauce consistency if needed.
  8. Season with salt and black pepper. Optionally, add cheese, roasted vegetables, or fresh herbs.
  9. Serve immediately, garnished with additional herbs or cheese.
