  • 1 pound ground turkey, lean
  • 1 can black beans, rinsed
  • 2 tablespoons taco seasoning
  • 8 corn or flour tortillas
  • 2 ripe avocados
  • Juice of 1 lime, freshly squeezed
  • A handful of fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add one tablespoon of olive oil.
  3. Crumble in the ground turkey and cook until browned, about 5-7 minutes, stirring frequently.
  4. Just before the turkey is fully cooked through, add in your taco seasoning and mix well.
  5. Stir in the rinsed black beans once the turkey is nicely browned.
  6. Allow everything to cook together for another 3-4 minutes until warmed through and then remove from heat.
  7. Wrap tortillas in aluminum foil and place them in the oven for about 10 minutes until warm and pliable.
  8. In a blender or food processor, combine two ripe avocados, juice from one lime, a handful of cilantro leaves, salt to taste, and blend until smooth.
  9. Take your warm tortillas out of the oven once all components are ready.
  10. Spoon generous amounts of the turkey-bean mixture onto each tortilla.
  11. Drizzle or dollop the avocado sauce generously on top.
  12. Garnish with additional cilantro if desired and serve immediately.

Store leftovers in an airtight container.
