  • 1.5 pounds (700 grams) potatoes (Yukon Gold or red potatoes recommended)
  • 7 ounces (200 grams) feta cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh rosemary or thyme, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry potatoes; cut into 1 to 1.5-inch chunks.
  3. In a large bowl, toss potatoes with olive oil, minced garlic, rosemary or thyme, salt, and black pepper.
  4. Spread potatoes evenly on a lined or greased baking tray.
  5. Roast for 30 minutes, then toss and roast for another 15 minutes.
  6. Cut or crumble feta cheese.
  7. Remove potatoes from oven; evenly add feta on top.
  8. Bake for an additional 10 minutes until feta softens.
  9. Garnish with fresh herbs and a drizzle of olive oil if desired. Serve warm.
