Ingredients

Scale
  • 1 block (200g) feta cheese
  • 1 large head of broccoli, cut into florets
  • 3 cloves garlic, peeled
  • 1 cup cherry tomatoes (optional)
  • 3 tablespoons olive oil
  • 300g pasta (penne, fusilli, or your choice)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 teaspoon chili flakes (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place broccoli florets, garlic cloves, and cherry tomatoes (if using) in a baking dish.
  3. Position the block of feta cheese in the center of the dish.
  4. Drizzle olive oil over the feta and vegetables.
  5. Season everything with salt, black pepper, and chili flakes.
  6. Bake for 25–30 minutes until the feta is soft and golden, and the broccoli is tender.
  7. While baking, cook the pasta in salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
  8. Remove the baking dish from the oven. Mash the feta with a fork, mixing it with the roasted broccoli, garlic, and tomatoes.
  9. Add reserved pasta water as needed to loosen the sauce.
  10. Combine the sauce with the cooked pasta, tossing well to coat.
  11. Adjust seasoning if necessary and garnish with fresh herbs before serving.

Notes

Cherry tomatoes are optional but add sweetness and color.

For a meaty option, add cooked chicken ham or turkey bacon.

Use gluten-free pasta to make the dish gluten-free.

Reserve pasta water helps create a silky sauce consistency.
