This Avocado Bliss Grilled Cheese is a modern twist on a timeless comfort food. Creamy avocado blends perfectly with melty cheese, tucked between two slices of buttery, golden-brown bread. It is quick, budget-friendly, and versatile enough to enjoy as a snack, a simple lunch, or a cozy dinner.

Ingredients

  • 2 slices of bread (white, whole wheat, or sourdough)
  • 1 ripe avocado
  • 2 slices of cheese (cheddar, mozzarella, or your favorite melting cheese)
  • 1 tablespoon butter, softened
  • Salt and black pepper, to taste
  • Optional add-ins: sliced tomato, baby spinach, red onion, or a fried egg

Instructions

  1. Lay two slices of bread on a clean surface. Spread softened butter on one side of each slice, making sure to reach the edges.
  2. Cut the avocado in half, remove the pit, and scoop out the flesh. Slice thinly or mash with a fork. Season with a pinch of salt and black pepper.
  3. Place one bread slice buttered side down. Add one slice of cheese, then layer the avocado on top. Add any extras like tomato, spinach, or a fried egg if desired.
  4. Place the second slice of cheese on top of the avocado, then cover with the second bread slice, buttered side up.
  5. Heat a nonstick skillet or griddle over medium heat. Once hot, place the sandwich in the skillet.
  6. Cook for 3–4 minutes on one side, pressing lightly with a spatula. Flip carefully and cook the other side for 3–4 minutes, until golden brown and crisp.
  7. Remove from the skillet and let the sandwich rest for 1 minute before slicing diagonally. Serve warm.

Notes

Use sourdough for a tangy flavor or whole wheat for a hearty bite.

Mashing the avocado gives a smoother filling, while slices provide more texture.

Add chili flakes, fresh herbs, or pesto for extra flavor.
