  • ½ cup cold, diced unsalted butter

  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine 1 ½ cups of all-purpose flour with ½ teaspoon of salt.
  3. Add ½ cup of cold, diced unsalted butter and mix until it resembles coarse crumbs.
  4. Gradually add 4-5 tablespoons of ice water until the dough forms.
  5. Shape the dough into a disc, wrap in plastic wrap, and chill in the fridge for 30 minutes.
  6. While your dough chills, heat a tablespoon of olive oil in a skillet over medium heat.
  7. Add 2 cups of chopped mushrooms and sauté them until golden brown—about 5-7 minutes.
  8. Toss in 1 tablespoon of finely chopped fresh sage and cook for another minute until fragrant.
  9. In a mixing bowl, combine 1 cup of fresh pumpkin puree with ½ cup heavy cream.
  10. Season with salt and pepper to taste.
  11. Fold in the sautéed mushroom mixture until well combined.
  12. Retrieve your chilled dough from the fridge and roll it out on a floured surface until about ¼ inch thick.
  13. Carefully transfer the rolled-out dough into a greased tart pan, pressing gently into the edges.
  14. Trim any excess dough hanging over the sides.
  15. Pour your savory pumpkin-sage-mushroom filling into the prepared crust.
  16. Smooth out with a spatula if necessary.
  17. Bake in the preheated oven for about 40-45 minutes or until set and lightly browned on top.
  18. Allow the tart to cool slightly before slicing into wedges.
  19. Garnish with additional fresh sage leaves if desired and serve warm or at room temperature.
