Ingredients

Scale
  • 2 medium apples, peeled, cored, and chopped
  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons sugar
  • 1 large egg
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Peel, core, and chop apples into small, even pieces. Toss with a pinch of cinnamon and 1 teaspoon sugar.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, salt, and remaining sugar.
  3. In a separate bowl, whisk egg, milk, vanilla, and melted butter until smooth.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Do not overmix.
  5. Fold apples gently into the batter until evenly distributed.
  6. Preheat waffle maker and lightly grease with butter or non-stick spray.
  7. Spoon about ¼ cup batter into each section of the waffle maker. Cook 3–4 minutes, until golden brown and cooked through.
  8. Transfer waffle donuts to a wire rack and let cool slightly.
  9. Prepare the glaze by whisking powdered sugar, milk, and vanilla until smooth.
  10. Dip each waffle donut in glaze or drizzle glaze over the top. Allow glaze to set for a few minutes before serving.

Notes

For extra crunch, fold chopped nuts into the batter before cooking.

Dust with powdered sugar instead of glazing for a lighter version.

Best served warm, but can be reheated in a toaster oven for a few minutes.
