  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

  • ½ cup unsalted butter, softened
  • ½ cup turkey bacon, finely crumbled (optional)
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup apple cider
  • ½ cup milk (any type)
  • ¾ cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, beat butter and brown sugar until light and fluffy, about 3–4 minutes.
  4. Add egg and vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the butter mixture in three parts, alternating with apple cider and milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Fold in turkey bacon if using.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spaced 2 inches apart.
  8. Bake for 12–15 minutes, until edges are set and tops spring back lightly.
  9. Allow cookies to cool on the sheets for 5 minutes, then transfer to wire racks.
  10. Warm caramel sauce slightly until pourable.
  11. Spread caramel on the flat side of one cookie and top with another to form a sandwich.
  12. Optional: drizzle additional caramel or sprinkle with sea salt.

Notes

Dough can be refrigerated for up to 24 hours before baking.

Use store-bought caramel to save time or homemade for extra flavor.
