This Apple Cider Cheesecake is a creamy, comforting dessert perfect for any occasion. Infused with the warm flavors of apple cider, cinnamon, and nutmeg, it combines a buttery crust with a smooth, flavorful filling. It’s easy to prepare, customizable, and always a crowd-pleaser.

Ingredients

  • 200g digestive biscuits or graham crackers, crushed
  • 100g butter, melted
  • 500g cream cheese, softened
  • 200g sugar
  • 3 large eggs
  • 120ml apple cider
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 tbsp all-purpose flour
  • Optional toppings: caramel sauce, apple slices, cinnamon sugar

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. Crush the digestive biscuits into fine crumbs.
  3. Combine the crumbs with melted butter until evenly mixed.
  4. Press the mixture firmly into the bottom of a 23cm (9-inch) springform pan. Chill while preparing the filling.
  5. Beat the cream cheese with sugar until smooth.
  6. Add the eggs one at a time, mixing thoroughly after each.
  7. Mix in apple cider and vanilla extract.
  8. Add cinnamon, nutmeg, and flour; stir until well combined.
  9. Pour the filling over the chilled crust, smoothing the top.
  10. Bake for 50–60 minutes, until edges are set and the center slightly jiggles.
  11. Turn off the oven and leave cheesecake inside with the door slightly open for 30 minutes.
  12. Remove from oven and cool completely at room temperature.
  13. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  14. Add optional toppings before serving.

Notes

Use room-temperature ingredients to prevent lumps.

Avoid overmixing to reduce cracking.

Chill thoroughly for the best texture.
