Ingredients

  • 1 cup chicken broth
  • 1 cup couscous
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh tomatoes, diced
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a medium saucepan over medium heat, bring 1 cup of chicken broth to a gentle simmer.
  2. Once simmering, stir in 1 cup of couscous.
  3. Remove from heat immediately, cover tightly with a lid, and let it sit for about 5 minutes.
  4. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  5. Add 2 minced garlic cloves and sauté until golden brown and fragrant—about 1-2 minutes.
  6. Toss in 2 cups of diced fresh tomatoes into the skillet with garlic.
  7. Cook for about 3-4 minutes until they soften slightly but still hold their shape.
  8. Fluff your couscous using a fork after letting it sit.
  9. Gently fold your sautéed tomatoes and garlic mixture into the fluffed couscous along with 1/4 cup chopped fresh basil and juice from half a lemon.
  10. Season with salt and pepper to taste.
