  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • ½ cup milk
  • ½ cup plum jam or homemade plum compote
  • 1 cup buttercream frosting (or whipped cream frosting of choice)
  • Optional: edible glitter or sugar pearls for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar on medium speed until pale and fluffy, about 3–4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then incorporate the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with milk. Start and end with the flour mixture, mixing on low speed until just combined.
  6. Fill each cupcake liner about 2/3 full with batter.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. Rotate the pan halfway through baking for even results.
  8. Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Using a small knife or cupcake corer, create a shallow hole in the center of each cupcake and fill with about 1 teaspoon of plum jam or compote.
  10. Frost each cupcake with buttercream, starting from the outer edge and moving toward the center.
  11. Decorate with edible glitter or sugar pearls as desired.
