These Low Carb Crispy Broccoli Cheese Rounds are a perfect combination of crunchy and cheesy. They are quick to prepare, versatile, and ideal as a snack, appetizer, or side dish. Made with simple, affordable ingredients, they are perfect for health-conscious eaters without sacrificing flavor.

  • 2 cups fresh broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese (or your preferred cheese)
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Wash and dry the broccoli florets thoroughly. Finely chop them to a rice-like texture.
  2. In a large bowl, combine the chopped broccoli, shredded cheese, almond flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Crack the eggs into the mixture and stir thoroughly, ensuring the broccoli is coated and the mixture binds together.
  4. Form small, evenly sized rounds using hands or a cookie scoop. Press each round lightly to hold the shape.
  5. Heat olive oil in a non-stick skillet over medium heat until hot but not smoking.
  6. Place the rounds in the skillet, leaving space between each. Cook for 3–4 minutes per side, until golden brown and crispy.
  7. Remove cooked rounds and place on a paper towel-lined plate to absorb excess oil.
  8. Serve immediately while warm, optionally with a dipping sauce like garlic aioli or yogurt ranch.
