  • 1 large cucumber, thinly sliced
  • 8 slices of soft white or whole wheat bread
  • 4 tablespoons cream cheese or soft spreadable cheese
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Optional: a pinch of garlic powder or paprika

Instructions

  1. Wash the cucumber thoroughly and peel if desired.
  2. Slice the cucumber very thinly using a knife or mandoline.
  3. Place the cucumber slices in a bowl, season with salt, pepper, and optional garlic powder or paprika. Mix gently.
  4. Lay out the bread slices on a clean surface. Flatten slightly if desired.
  5. Spread a thin layer of cream cheese on each bread slice.
  6. Sprinkle chopped dill evenly over the cheese.
  7. Arrange cucumber slices on the cheese, slightly overlapping them.
  8. Place another bread slice on top and press gently to secure.
  9. Trim crusts if desired and cut sandwiches into rectangles or triangles.
  10. Refrigerate for 10–15 minutes before serving.

Notes

For extra freshness, add paper towels between cucumber layers to absorb excess moisture.
