For the crust:

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted

For the cheesecake filling:

  • 24 oz (680 g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

For the butterbeer swirl:

  • ½ cup butterscotch syrup
  • 2 tablespoons heavy cream

Instructions

  1. Prepare the crust: Combine graham cracker crumbs with melted butter. Press firmly into the bottom of a parchment-lined springform pan. Chill in the refrigerator while preparing the filling.
  2. Make the cheesecake batter: Beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Mix in sour cream and vanilla extract until fully incorporated.
  3. Prepare the butterbeer swirl: In a small bowl, whisk together butterscotch syrup and heavy cream until smooth.
  4. Assemble the cheesecake: Pour half of the cheesecake batter over the chilled crust. Drizzle half of the butterbeer mixture. Add the remaining cheesecake batter and top with remaining butterbeer swirl. Use a skewer to create swirls.
  5. Bake: Preheat oven to 325°F (160°C). Place the springform pan in a water bath. Bake for 60–70 minutes until edges are set but center slightly jiggles.
  6. Cool gradually: Turn off oven and let cheesecake cool in oven for 1 hour with door slightly open.
  7. Chill: Refrigerate for 4–6 hours or overnight.
  8. Serve: Decorate with house-themed toppings if desired. Slice carefully with a sharp knife.
