Crust:

  • 200 g graham cracker crumbs
  • 100 g melted unsalted butter
  • 2 tbsp brown sugar

Filling:

  • 700 g cream cheese, softened
  • 200 g granulated sugar
  • 200 ml sour cream
  • 3 large eggs
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp butter extract
  • ½ cup butterscotch sauce

Galaxy Swirl:

  • Blue gel food coloring
  • Silver food coloring or edible luster dust

Topping (optional):

  • Whipped cream
  • Extra butterscotch drizzle

Instructions

  1. Prepare the Pan: Preheat oven to 175°C (350°F). Lightly grease a 9-inch springform pan and line the base with parchment paper.
  2. Make the Crust: In a bowl, mix graham cracker crumbs, melted butter, and brown sugar until combined. Press into the bottom of the pan and bake for 10 minutes. Allow to cool.
  3. Prepare the Filling: Beat cream cheese until smooth. Add sugar and mix until creamy. Blend in sour cream, cornstarch, vanilla, and butter extract. Add eggs one at a time, mixing on low speed. Stir in butterscotch sauce gently until smooth.
  4. Create the Swirl: Reserve ½ cup of batter and divide between two small bowls. Tint one portion blue and the other silver. Pour the plain batter into the pan over the crust. Drop spoonfuls of the colored batter over the top and swirl with a skewer to create a galaxy effect.
  5. Bake the Cheesecake: Place the pan in a roasting pan and pour hot water halfway up the sides to form a water bath. Bake at 160°C (325°F) for 55–65 minutes until edges are set and the center slightly jiggles. Turn off oven, crack the door open, and let cheesecake rest inside for 1 hour.
  6. Cool and Chill: Remove from oven and water bath. Allow to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  7. Serve: Release the springform pan, transfer cheesecake to a serving plate, and garnish with whipped cream and butterscotch drizzle if desired.

Notes

Do not overmix the batter after adding eggs to prevent cracks.

Add a bit more blue or silver coloring for a bolder galaxy effect.

Allow the cheesecake to cool gradually to keep the top smooth.

Chill overnight for the creamiest texture and best flavor.
