These Lord of the Rings Lembas Bread Bars are inspired by Tolkien’s famous Elven waybread. Lightly sweetened with honey, spiced with cinnamon and nutmeg, and baked to a tender, chewy perfection, they’re ideal for snacking, road trips, or themed movie nights.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup brown sugar, packed
  • ¼ cup honey
  • ½ cup butter (or plant-based butter)
  • ¼ cup milk (or dairy-free alternative)
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, oats, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Melt butter in a small saucepan or microwave-safe bowl. Stir in honey, milk, and vanilla extract until fully blended.
  4. Pour wet mixture into dry mixture. Stir with a spatula until a soft, sticky dough forms. If too dry, add a splash more milk.
  5. Transfer dough to the baking pan. Press it firmly and evenly into all corners.
  6. Lightly score the top into rectangles or diamonds if you want a traditional lembas look.
  7. Bake for 20–25 minutes, or until edges are golden brown and center looks set.
  8. Cool in the pan for 15 minutes. Lift out carefully, cut along the score marks, and allow bars to cool completely before storing.

Notes

For extra flavor, add ¼ cup chopped dried fruit or nuts.

To make bars softer, reduce baking time by 2 minutes.

Drizzle a touch of honey over warm bars for added sweetness.
