Cake Layers:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup buttermilk
  • ½ cup whole milk
  • Yellow food coloring (optional)

Frosting and Filling:

  • 1 ½ cups unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • ¼ cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and prepare three 8-inch round cake pans.
  2. Whisk together flour, baking powder, baking soda, and salt; set aside.
  3. Beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla.
  5. Gradually alternate adding dry mixture and buttermilk to the butter mixture, starting and ending with dry ingredients.
  6. Fold in milk and optional yellow food coloring until smooth.
  7. Divide batter evenly among prepared pans and bake 25-30 minutes, until a toothpick comes out clean.
  8. Cool cakes in pans 10 minutes, then transfer to wire racks.
  9. Beat butter for frosting until creamy. Gradually add powdered sugar, then vanilla and heavy cream until smooth.
  10. Assemble the cake by layering frosting between cake layers and covering the top and sides. Smooth with a spatula.
  11. Decorate as desired. Chill briefly to set frosting before slicing.

Notes

Ensure cakes are fully cooled before frosting to prevent melting.

Optional: Brush each layer with milk or simple syrup for extra moisture.
